Home Grown: Fresh Fig Jam



I have been daydreaming about planting a fig tree of our own and while we still aren't quite there yet, I was able to snag a few fresh figs from my friend's garden.  In order to repay the favor I decided to make them some fresh fig jam.

Ingredients:
1.5 lbs fresh figs (stems removed)
3 teaspoons lemon juice
1 cup sugar
1.5 tablespoons pectin

Directions:
Prepare glass canning jars by heating lids and jars in boiling water.

Combine figs, lemon juice and sugar in large deep saucepan.  Bring mixture to a roaring boil over medium-high heat, stirring constantly. Once sugar is dissolved and figs are evenly mashed add pectin and continue to heat until jam thickens. Remove from heat and ladle into prepared glass jars.

Wipe jar rims with clean damp cloth and cover with lids. Process jars in a pot of boiling water for 10 minutes and then cool jars completely. Store in a cool dark place for up to 6 months.
